Geoduck Salad

Ingredients:
- 1 Taylor Geoduck
- 2 teaspoons lemon juice
- 2 teaspoons olive oil
- 1 tablespoon sweet chili, finely minced
- Salt and pepper, to taste
- 6 mint leaves
- Kale or collard greens, lightly blanched
Directions:
- Clean geoduck by blanching in boiling water for 10 seconds, place directly in an ice bath
- Cut the shell off the meat and remove the belly meat (save this for a delicious chowder)
- Remove outside skin from geoduck
- Slice the neck meat paper thin
- Toss greens with lemon juice and olive oil
- Add geoduck, chili, salt, pepper and mint
- Serve and enjoy
