Pear Ginger Mignonette

Makes enough for 2 dozen oysters

Recipe by friend Kourtney Paranteau


  • ¼ cup diced fresh pear, skins removed 
  • 1 inch knob of fresh ginger, grated
  • 3 tablespoons champagne vinegar 
  • 1 teaspoons freshly cracked pepper 
  • 1 shallot finely chopped
  • 1.5 tablespoon honey 
  • 1 teaspoon soy sauce 
  • 2 teaspoons finely chopped cilantro, plus more for garnishing. 

Whisk all of the above ingredients in a small bowl until entirely combined and serve over freshly shucked oysters with lime cheeks.
