Pear Ginger Mignonette

Makes enough for 2 dozen oysters
Recipe by friend Kourtney Paranteau
Ingredients:
- ¼ cup diced fresh pear, skins removed
- 1 inch knob of fresh ginger, grated
- 3 tablespoons champagne vinegar
- 1 teaspoons freshly cracked pepper
- 1 shallot finely chopped
- 1.5 tablespoon honey
- 1 teaspoon soy sauce
- 2 teaspoons finely chopped cilantro, plus more for garnishing.
Whisk all of the above ingredients in a small bowl until entirely combined and serve over freshly shucked oysters with lime cheeks.
