Mother's Day Pink Champagne Mignonette

Ingredients:
- 6 oysters
- 2 tablespoons finely chopped shallot
- ¼ cup raspberry champagne vinegar
- ¼ cup sparkling pink wine
- 1 teaspoon black pepper
- 2 teaspoons chives
Makes 6 oyster appertifs
Instructions:
- Simply shuck your oysters and set aside.
- Whisk your shallot with vinegar, sparkling wine, and black pepper.
- Find 6 champagne flutes or small cocktail glasses wherein oyster shells can balance on the mouth of the cup.
- Pour sparkling wine into each vessel before resting an oyster on each glass and spooning about 1 ½ teaspoon of mignonette into each oyster before carefully serving to mom and their company.
