Dosewallips Oysters
The Olympic Peninsula is the most northwestern portion of the contiguous United States. With old growth coniferous forests, deep alpine lakes, and wild untamed rivers, this mountainous region has a raw beauty unmatched anywhere in the world. Along the rocky shoreline surrounding the Peninsula, which is shared by killer whales and bald eagles, we have established our Dosewallips farm. Oysters here take their sweet time growing (twice as long as our Tottens) but the wait is truly worthwhile. The taste is as light as the mountain air, and the shells are smooth and strong like the Dosewallips River which built the delta. They are the epitome of all Hood Canal oysters, and are without a doubt a favorite "shooter" in oyster bars.
